Grilled Peach Caprese with Traditional Balsamic Vinegar of Modena PDO

Ingredients

  • 4 ripe peaches
  • 200 g (7 oz) mozzarella cheese
  • Fresh basil leaves
  • Traditional Balsamic Vinegar of Modena PDO
  • Extra virgin olive oil
  • Salt to taste

Preparation

  1. Wash the peaches thoroughly, cut them in half, and remove the pit.
  2. Heat a grill or grill pan and grill the peach halves for a few minutes on each side until they have grill marks and are slightly caramelised.
  3. Slice the mozzarella.
  4. Arrange the grilled peach slices and mozzarella slices alternately on a serving plate.
  5. Season with a pinch of salt, drizzle with extra virgin olive oil, and finally add a few drops of Traditional Balsamic Vinegar of Modena PDO.
  6. Garnish with fresh basil leaves and serve immediately.
