Balsamic Vinegar of Modena PGI Trio
This balsamic vinegar is also obtained from the IGP, Protected Geographical Indication, production chain. It is the result of a skilful blend of cooked musts with the addition of wine vinegar as required by the IGP regulations, aged in barrels of different woods to give it those flavours that only local crafts processing can guarantee. A sweet-and-sour condiment with an intense brown colour and a delicately persistent aroma, slightly acetic and complete with the delicate woody aftertaste that ageing gives it. It lends itself well to use on stuffed pasta, rice, cooked vegetables, on meat or fish, strictly at the end of cooking, but also to add dimension to a plate of typical seasoned cheeses, on fruit and on ice cream, preferably vanilla ice cream. Definitely worth trying because sometimes the palate reveals unknown pleasures selected by your taste buds!

Vinegar made according to PGI (Protected Geographical Indication) specifications from cooked must and wine vinegar in percentages may not be indicated on labels. Only “Balsamic Vinegar of Modena PGI” must be indicated on the main label, in addition to the logo, and nothing else that might tempt the retailer to make exploitative interpretations.
