“Botte Piccola” seasoning: obtained from the same line as the PGI products, it contains cooked must and wine vinegar as required by regulations but, aged in oak barrels, it is ennobled to distinguish the fine sweet and sour organoleptic flavours enhanced in combination with boiled meats or mature cheeses or simply to enhance a simple hors d’oeuvre or aperitif. Family-sized, it is ideal on salads and vegetables in general, both cooked and raw, white and red meats as well as grilled and soft cheeses. Its “ageing” makes it ideal as a condiment for cooked vegetables or a simple omelette, but we also suggest trying it on vanilla ice cream.
Condiments: Anything that does not comply with the PDO or PGI specifications, even for only one parameter of that regulation, must be defined differently on the label, hence “Condiment”, which distinguishes the product commercially. They are usually obtained from the same production line as Balsamic Vinegar of Modena PGI or as the two PDO products, complete with different aromas acquired in the passages from different casks, to ensure the products have real and alternative balsamic aromas. The seasonings are used following what is already known and recommended for PGI and PDO products, but it is precisely the more or less evident and original flavourings that they may express that can trigger interesting and diverse sensations on the palate, making them a valid alternative for those who like to appreciate, discover and diversify the pleasures of the table. The “Botte Segreta” seasoning is different because it is obtained from the traditional balsamic vinegar production line.
