President Mazzetti’s (Consortium of Modena’s Igp Balsamic Vinegar) speech for the renomination of Balsamic Vinegar as UNESCO’s heritage
Cesare Mazzetti, president of the Consortium of Modena’s Igp Balsamic Vinegar, intervenes the day after the announcement done by the regional councillor Gian Carlo Muzzarelli about the resolution, submitted by Muzzarelli himself to the Council of the Region Emilia-Romagna, «asking to concretely support the resumption of the process for the nomination to Unesco of balsamic vinegar’s tradition».
«Our Consortium – says Mazzetti – supports and is participating actively in the predisposition of the necessary materials and documents for the nomination’s submission of Balsamic Vinegar’s tradition as Unesco’s intangible heritage, along with the two Consortiums for the Protection of Modena’s and Reggio Emilia’s Traditional Balsamic Vinegar and Spilamberto’s Coterie. Balsamic Vinegar’s culture is deeply rooted in the history of Emilia-Romagna’s citizens and of our territory, it reflects in our traditions (which are like batteries for us: they are bought when a child is born and then they are given as dowry, and lastly as inheritance), but also in architecture, for example in the attics built taking into account the needs of the vinegar factories. There’s no other place in the world where one can find a family production of vinegar which is this widespread, and counts around 5 thousand families who possess at least one battery of barrels. In Modena and in Reggio vinegar is a serious matter, just like bread and pasta are for children, for example. This huge passion and this mass spread has passed from small families to craft producers, and slowly but steadily big-scale productions started and they brought vinegar’s flavour all over the world. This is why we think the collaboration between all consortiums for protection and all amateur associations is crucial to support Unesco’s project which, once it’ll be secured, will be able to give even more consciousness on the ‘black gold’ and its investment, apart from an even bigger spread of the product worlwide».
